Fish Balls are known as a nostalgic "ancient molecular dish" for Hangzhou locals. While the Clear Broth Fish Balls are commonly found in most Hangzhou cuisine restaurants and farmers' markets, there's another dish—Chopped Fish Balls—that’s much rarer, with only a few restaurants capable of making it.
